Beer. It isn’t just for breakfast anymore. Well, actually maybe it could be. Beer Guy Shane Zeppelin created this modified Belgian waffle recipe and gave it a whirl!

I love Belgian waffles, especially the malted kind. I did some research and found some people added beer to their recipe, so I thought I would tr it. Since I was making them for the first time, I wanted to use a beer that was more neutral in flavor, kind of like a pilsner. I didn’t have a Pilsner on hand, but I did have a beer that Greg brought back to me from Wisconsin called Spotted Cow by New Glarus Brewing. This beer imparts a great flavor to the waffles that isn’t overbearing, but still there, and adds to the malty flavor from the Malted Milk Powder.

The waffles turned out great with a golden crisp outer layer and light fluffy middle. I added the standard butter and maple syrup, but you could go with a fruit pie filling and whipped cream if you so desire.

Waffle Recipe_smSince Spotted Cow has an ABV of 4.8%, you don’t taste any alcohol in the waffle, but the flavor of the beer comes through. A person could experiment with about any beer they like. I would imagine a Belgian ale of some sort would be even more appropriate.

Ingredients:

  • 2 cups flour
  • 4 tsp baking powder
  • 1/4 c malted powder
  • 1/2 tsp salt
  • 1/4 c sugar
  • 2 eggs, separated
  • 1/2 c oil
  • 1 tps vanilla
  • 1 cup milk
  • 1-1/4 cup beer (I used New Glarus Spotted Cow)

Instructions:

  • Mix dry ingredients, set aside.
  • Mix liquid ingredients and egg yolks together.
  • Beat egg whites until stiff.
  • Form a hallow in the middle of the dry ingredients and add the liquid.
  • Whisk from the center to the outer edge of the bowl until dry ingredients are wet, do not over beat.
  • Gently fold in egg whites until batter is airy.
  • Place approximately 3/4 cup of batter Bake on Belgian waffle iron, and bake according to iron instructions.

Notes:

  • Yields 8 waffles.
  • Golden crunchy outside, light and fluffy inside.
  • Enjoy the rest of the bottle of beer while cooking.
